You're incorrect. VMWare does not emulate your video card by default, if you go into device manager on the guest you'll see the VMWare video card listed. That's how its able to define its own resolutions. I don't know what actually happens when you set the display to such a high resolution, I presume you have to scroll in the window, but the guest has no awareness of what video card is in your machine or what capabilities it does or doesn't have. That's all managed through the VMWare Workstation application.
