If its connecting to an Exchange account then that is set by the sysadmin, otherwise its somewhere in the account options but I don't even connect to anything else other than Exchange accounts these days in Outlook so not sure where it is. I do Linux support for a living and don't even have a Windows machine. The problem is that her email display name is "Admin Server". Obviously, that is not her name. I created a Windows VM and tried to figure out how to change the display name on an Outlook or Office365 mail account and it's not obvious. Googling hasn't helped.
