I use Emacs, even on a Windows machine. In the Windows case, it's installed via MSYSv2. I'm also interested in the Windows Subsystem for Linux, but I haven't tried it yet. Of course, under Linux, it's both Emacs and Vim. (I like both of them.) Under Mac OS, I haven't had much success with UNIX editors, as the accessibility of the terminal environment isn't what it ought to be, and I need good braille display support too. Textmate is the best that I've found so far for the Mac. All of the above should handle UTF-8. I know Emacs and Vim do.
