I've read positive comments about the accessibility of VirtualBox, but I haven't yet tried it. This could be a good option for you.

Yes. Vagrant combined with Packer; I've never gotten either to work, or not yet, though I plan to experiment. If there is ny configuration you can do in the gui that you cannot do at the command line instead, I'd be surprised. You might have more control at the command line than you do in the gui. I wrote a bunc of scripts that allow me to create virtual machines in seconds. Those scripts might be a case of me re-inventing the wheel though because I am told there is a linux utility called vagrant that allows you to create a specifications file, run vagrant, and it creates a virtual machine for you. I am going to have to check that out. But I've been very happy with virtualbox. One cool thing about virtualbox is that you can do a screen cap at the command line.
