None that I know of, but I don't know of that many podcasts for any sysadmins tools. Both HyperV and ESXI are free from the various web sites, HyperV comes with Windows Server 2008 and R2, there's also a stand alone version you can get. ESXI is just virtualization so it'd be all you get. I wouldn't recommend Fusion or VMWare Workstation, not because they're inaccessible, both of them work really well with speech, but they're designed for desktop virtualization, AKA virtualizing an OS on a desktop platform, not a server platform. I'd recommend either HyperV or VMWare's ESXI product. I've only played with HyperV for a few minutes, but its MMC based and looks accessible, but another blind sysadmins said that deep down there are annoyances. ESXI is a specialized operating system just for virtualization. Once its installed, you never touch the host system again and do all your work from your client machine connected over IP to the host. The interface isn't the most accessible, but its doable, and I've been very impressed with VMWare's products on the whole.
