Hi Andrew: I'm pretty sure ESX supports this but don't know off the top of my head how to do it. As to getting the service console and various VM instances talking on different nics, this is done by simply using different virtual switches. The service console gets its own virtual switch and that can be associated with one NIC, then you can use another virtual switch for all your VMs. There is yet a third virtual switch called VMKernel that is used for VMotion and ISCSI SAN connections. If you're working with a single ESX server, you probably won't use it. Hopefully this gives you a start, let me know if you need more help.
