I'm afraid I haven't got any experience accessing a Mac running VO remotely, but I am using an Azure VM running NVDA for development via the Win 10 RDP client and find it perfectly usable. There is obviously a delay, but it is barely noticeable, and suspect some may not even realize the screen reader was running remotely if they didn't use a screen reader every day. The only problem I find is that the speech does break up (crackle) a lot which some people may find annoying but for me, when viewed against the benefits of developing on a managed VM with virtually limitless power from virtually anywhere is a small price to pay. I believe MS have spent a lot of time optimizing sound and video over remote sessions though and so suspect Windows on the remote machine in combination with the native RDP client are probably doing some clever stuff behind the scenes to make this experience as good as it is now. So whether this would work as well for the Mac and VO is another matter. I just thought I'd reply anyway though to let you know that in principle at least, based on my experience, there's no reason why you shouldn't be able to use a Mac with VO remotely, particularly if Apple have made similar optimisations to MS in terms of remote access. Also, if it helps, I tend to take a pretty pragmatic view about this kind of situation with regard to potential work and would say if you like the look of the role, you should apply for the position regardless of any potential issues. If you do get an interview and it is going well, raise this as a potential issue. If they are interested in you and this is a key part of the role and there is no other way for you to do whatever you need to do on the Mac remotely, you could ask whether they would be able to set up a test machine for you to remote into to see whether it is viable before making any decisions. If they aren't prepared to do that, it may not be a great place for you to work. If they are, the probably are, and even if you wouldn't feel comfortable using the Mac remotely, tell them. I think employers appreciate honesty and you may find they've already had a conversation with others and have worked out a way around the issue, or can get somebody else to do that particular task on the basis that you would do something else which plays to your strengths. But if it doesn't work out on this occasion, at least you're not stuck in a role which you might struggle to undertake, and the potential employer is left with a very positive impression of you which is likely to stay with them in the event other opportunities arise in the future.
