In my experience, accessibility is always bad / terrible with stuff written in GTK. I know that WireShark is great for filtering, but to be honest, I just use the windows port of tcpdump which is a command line capturing tool and pipe the output to a text file; for small captures, you shouldn't really need to do that much filtering, but this solution isn't really practical for large networks. I know there's an item in the wish list on the Wireshark website relating to accessibility. That's not in the done list so I'm assuming that it's not more accessible in Linux than it is in Windows? There are a lot of command line packet sniffers for linux. I use ngrep. Looks like there is a command line version of wireshark too.
